
Applesauce Jumbles
Cookies:
2-3/4 cup flour
1-1/2 cup brown sugar
1 tsp salt
½ tsp baking soda
¾ cup applesauce
½ cup shortening (butter, softened)
2 eggs1 tsp cinnamon
¼ tsp cloves
1 tsp vanilla extract
1 bag chocolate chips
Icing:
1/3 cup butter
2 cups powdered confectioner sugar
1-1/2 tsp vanilla extract
2-4 Tbsp water
Mix all ingredients together in a large bowl until smooth. Scoop spoonfuls onto ungreased cookie sheets about two inches apart. Bake at 350 degrees for about ten minutes until golden brown. Cool completely before icing.
While cookies are baking, prepare the icing. In a small saucepan, melt butter completely. Remove from heat and add sugar and vanilla. Add warm water by the tablespoon until icing is a spreadable consistency. Top each cooled cookie with desired amount. I only used half the icing and it was plenty!
